Sauce
1 onion
Large clove garlic
Olive oil
Half a red capsicum
Small tin of tomato paste
Parsley (or whatever herbs you want)
Meat Balls
8 sausages
Plain flour
Allow two sausages per person (3 if hungry)
Pasta
Your choice
Sauce Steps:
1.Chop onion, garlic and pepper into whatever dice you want cook in olive oil until onion is soft and clear.
2.Add tomato paste and cook off on a low heat for a couple of minutes stirring all the time.
3.Add the tinned tomatoes and 150ml water and bring to a slow simmer.
4.Chop a small handful of parsley and add it to the sauce.
5.Season to taste and set to one side.
Meat ball steps:
1.Skin 8 basil and tomato sausages ( or whatever sausages you have) and divide each one into 3 or 4 sections to form the meat balls.
2.Dust the balls very lightly in flour.
3.Brown off the balls in a frying pan in a little olive oil.
4.Once crisp and browned, drop them into the simmering sauce for 9-10 minutes. (Just the amount of time it will take to cook the pasta)
Drain the Pasta
Top with Cheatballs and sauce.
Garnish with parsley, parmesan and enjoy.
Serve with a nice glass of RED WINE
