1.Salt n pepper roast then heat olive oil in a Dutch Oven.
2.When hot, seal each surface then remove from pot.
3.Place 2 onions, celery, 4 garlic cloves in the Dutch Oven and sweat for about 10 minutes.
4.De-caramelise the pot with some red wine.
5.Put the beef back into the Dutch oven, add beef stock to approx ½ way up the beef roast.
6.Place in the oven (170 degrees) for approx 3-4 hours.
